Le principali specie fungine in grado di creare problemi nel campo dell’alimentazione uma na quanto in quella animale appartengono ai generi Fusarium, Aspergillus e Penicillum. Il mais è la specie vegetale considerata più sensibile all’infestazione, mentre il riso è la meno sensibile.
